It was 2002, and I was embarking on my very first trip to Osaka, Japan. I was intrigued by Japanese culture and was excited to finally have the opportunity to visit this beautiful country. While attending The University of North Carolina at Charlotte, I joined student organization called JASA...the Japanese Student Association, which helped to pique my interest in the Japanese culture, language, and the people.
While I was returning from Thailand trip in 2001, and had a 6-hour stopover in Hong Kong airport. While waiting in the terminal, I met a Japanese young lady who was also having a long layover. I was seated and she came and sat next to me. We struck up a conversation, She was returning home from visiting a friend in Australia. She visited all sorts of interesting places, and tried all kind of foods. It was fascinating to hear about her travels, and I enjoyed learning about her culture.
As time passed, we continued to talk and before we knew it our layovers were over, and it was time to catch our respective flights. Despite our short amount of time we had together, it was a memorable experience and I'm grateful for the chance to have met such a kind and interesting person.
Before the Japanese young lady (Sanako) and I parted ways, I asked for her email address. We had hit it off and I wanted to stay in touch, but I didn't want to come off as too pushy or intrude on her privacy. That's why I decided to ask for her email address as opposed to her phone number.
I thought that an email address was a less intrusive way to stay in contact. It allows for her to have more control over the communication flow, and gives both parties the option to decide when and how often they want to correspond. With a phone number, there is a greater potential for constant communication and a higher level of expectations.
In addition, an email address allows for more flexibility in the way we communicate. We can send each other messages, photos, and links to interesting articles or websites. It's also a more formal way of staying in touch, which I thought was appropriate given that we had just met and were still getting to know each other.
The Japanese young lady was happy to share her email address with me and we exchanged a few emails over the following weeks. It was a nice way to stay connected and continue getting to know each other. We were able to have deeper conversations and share more about ourselves through writing. As time went on, we began to feel more comfortable with each other and decided to exchange phone numbers as well. This allowed us to have more spontaneous conversations and made it easier to make plans to meet up.

Our first stop was Osaka Castle (or Osaka-Jo), which was located in the heart of the city. The market is a haven for seafood lovers, offering everything from succulent oysters to mouthwatering sashimi.
Sanako had me try some of the local cuisine, which was unlike anything I had ever tasted before. The sushi was fresh and flavorful, and the tempura was light and crispy. I even tried some of the more unusual dishes, such as Takoyaki. Takoyaki is made from a batter of wheat flour, eggs, and dashi (a Japanese cooking stock). Chopped pieces of cooked octopus are added to the batter, along with green onions, pickled ginger, and other seasonings. The mixture is then poured into special spherical molds in a hot griddle. As the batter cooks, the vendor uses skewers or special tools to continuously turn the balls to achieve a round shape and even cooking.
Sanako also introduced me to Osaka-styled Okonomiyaki. In Osaka-style Okonomiyaki, the ingredients, including shredded cabbage, green onions, tempura scraps, and any desired protein such as sliced pork belly, shrimp, squid, or octopus, are mixed together with a batter made from flour, grated yam, water or broth, and eggs. The mixture is then poured onto a hot griddle in a round pancake shape and cooked until the outer layer becomes golden brown and crispy.
With bellies full, we had the energy to continue on our sightseeing journey. We next visited the Hozenji Temple and Alley.
